At first glance this recipe looks very complex, but let me assure you it’s worth every moment - the trick is to just do the preparation in the right order.

Pig’s trotters have a unique taste, and I’m not going to pretend that they are delicious on their own. They are more about texture, so this dish needs the smoked ham hock, onions and vinegar, and it wouldn’t be the same without the spices. It has always been on the menu at Trinity and is a hugely popular starter.
