Lentils and smoked bacon are a fantastic combination with partridge. For the smoked bacon in this recipe I like to use a smoked variety of pancetta (a cured streaky bacon). It has fantastic depth of flavour compared to ordinary smoked bacon. Accompanied by celeriac purée here, this dish is an all-round texture and flavour experience that will wow any guest.
