This is a cracking recipe for small almond-flavoured biscuits that can be sandwiched together with cream, dipped in chocolate or added to a knickerbocker glory. They remind me of breakfast in France, and I know it’s a bit naughty but I think they’re great dipped in a cup of tea! You can make the macaroons in a variety of colours and flavours by adding pistachio purée, chocolate powder or orange zest to the mixture.
