This is the perfect dessert for a summer’s evening and works best with fruit that is soft and oozing with sweetness. The cucumber might seem a strange addition, but it gives the same result as it does in a jug of Pimms: a watery, savoury note that gives depth of flavour.

Ingredients

  • 1 kg over-ripe summer fruits (strawberries, raspberries, blackberries, redcurrants)
  • 1.5 kg watermelon</

Method

Preparation

Two days before serving, hull the strawberries and pick over the berries and currants. Set aside a few of the select and visually appealing fruits to serve at the end. Dice the watermelon, discarding the skin and seeds. Peel, deseed and chop the cucumber.
