These burgers are a great vegetarian barbecue alternative, with Portobello mushrooms acting as the ‘bap’, creamy goat’s cheese as the ‘burger’ and sweet piquillo peppers as the ‘relish’. A plate of these should please most of your guests, not just the vegetarian ones!
Peel the mushrooms and remove the stalks and some of the black gills underneath. Marinate the mushrooms for a few minutes in a splash of olive oil, the basil stalks and plenty of salt and pepper. Cut the cheese into 6 slices. Drain the peppers.
