Pimms made correctly is a great drink; made badly it is just a boozy fruit salad. The Pimms we make at Trinity goes down a storm on Sundays in summer, and the key to our recipe is not to over-garnish. Everything that goes into the glass should be there to bring out the flavour of the base spirit and nothing more.
Leaving the skin on, peel the cucumber in tagliatelle-like strips until you reach the seeds.
Combine the Pimm’s, lemonade and ginger ale in a long, ice-filled glass along with the lemon and orange slices and the borage, mint and cucumber strips. Stir with a straw and serve.
