At Trinity we use this basic vinaigrette for dressing salads, new potatoes and grilled fish. It keeps well in the fridge, and I find you get more consistent results when making a large batch and storing it this way rather than if you make individual portions when required.

Ingredients

  • 250 ml good-quality olive oil
  • 250 ml vegetable oil
  • 125

Method

  1. Put all the ingredients into a bowl, cover and leave in the fridge overnight.
  2. The next day, blend the ingredients together. I use a hand blender but a goblet blender will do the job as well.
  3. Pass the dressing through a fine sieve to remove the unwanted shallots, garlic and herbs. Store in an airtight container in the fridge (it will keep for up to a m
