Tapenade is a great basic to have in the fridge. Although you can buy perfectly good ready-made versions nowadays, I always feel homemade is best.

I use Kalamata olives that I pit myself as their flavour is less intense and more palatable than other olives. Use good-quality olive oil and a dash of lemon to add balance to the olive purée. It is delicious served alongside the John Dory salad or with a grilled steak.
