I believe folk are divided when it comes to red and brown sauce. I usually fall into the red camp, but when it comes to homemade I’m never as impressed with tomato sauce as I am with brown. This sweet, spicy brown sauce does away with synthetic flavour and is just great with egg and chips.

Ingredients

  • 500 g pitted dates
  • 1 onion, peeled and chopped
  • 2 cloves

Method

  1. Put all the ingredients into a saucepan and cover the surface closely with a ‘lid’ of parchment paper. Simmer gently over a low heat for 50 minutes, until all of the fruit is completely soft. Remove from the heat and leave to cool for 30 minutes.
  2. Transfer the contents of the pan to a blender and blend well, then decant into sterilized containers while warm. Sea
