For kids who like traditional pancakes, these coconut oat versions are packed full of healthy ingredients but easy to freeze for an instant mid-week breakfast.

Ingredients

  • 1 banana
  • 2 eggs
  • 200 ml tinned coconut milk

Method

  1. Mash the banana and add it to a large bowl.
  2. Add in the eggs, coconut milk and honey and mix.
  3. Add the oats, flour, bicarbonate of soda and desiccated coconut and mix a final time.
  4. Heat the oil or butter in a frying pan and add a couple of spoonfuls of the mixture at a time to make each pancake. You should be able to fit 4 pancakes in the pan.
