This butternut squash soup has a delicious creamy texture despite not having any cream in it at all. It’s very lightly spiced so perfect for kids and makes a really comforting lunch on a winter’s day.

Ingredients

  • 1 small butternut squash or 500 g frozen squash chunks

Method

  1. If using a fresh butternut squash, peel it and then chop into small bite-sized pieces.
  2. Leave the skins on the potato and chop into similar-sized chunks.
  3. Add the oil and onion to a large saucepan and sauté for 2–3 minutes.
  4. Add the garlic and curry powder and cook for about 30 seconds, stirring constantly.
