All the delicious flavours of creamy chicken curry and rice but cooked in one pot in less than half an hour.

Ingredients

  • ½ tbsp oil
  • 1 onion diced
  • 2 garlic cloves, crushed

Method

  1. Heat the oil in a large pan or casserole dish on a medium heat on the hob.
  2. Add the onion, garlic and ginger and sauté for 2–3 minutes until the onions have softened but haven’t yet started to brown.
  3. Add the curry paste and mix quickly, cooking for about 30 seconds.
  4. Add the diced chicken and mix well.
  5. Finally add the chicken stock,
