A tasty and warming one-pot veggie chilli ready in just over 20 minutes.

Ingredients

  • ½ tbsp oil
  • 1 onion, diced
  • 1 garlic clove, crushed

Method

  1. Heat the oil in a large pan or casserole dish.
  2. Add the onions and garlic and cook for 2–3 minutes.
  3. Add the chipotle paste, ground cumin and smoked paprika, stir well and cook for another minute.
  4. Add the chopped tomatoes, kidney beans, black beans and vegetable stock.
  5. Bring to the boil and simmer for 8 minutes.
