Creamy chicken satay and vegetables all cooked together in one pan with noodles.

Ingredients

  • 400 g chicken thighs (skinless and boneless)
  • ½ tbsp oil

Method

  1. Chop the chicken thighs into bite sized pieces.
  2. Add them to a large frying pan or casserole dish on the hob along with the oil and curry paste and cook for 3–4 minutes.
  3. Add the peanut butter, coconut milk and soy sauce and mix well.
  4. Add the sugar snap peas, baby corn and red pepper and cook for about 5 minutes.
  5. Finally add the nood
