It’s not always easy to get children to eat fish but coating them in crispy panko breadcrumbs is a great way to introduce them to different types and flavours of fish. I use a packet of fish pie mix for ease. The fish has already been skinned and chopped, but feel free to do this yourself if you prefer.

Ingredients

  • 50 g plain flour
  • 2 eggs
  • 50 g panko breadcrumbs

Method

  1. Preheat the oven to 220°C/200°C Fan/Gas Mark 7 and line a baking tray with parchment paper.
