This recipe is my homemade version of the delicious rich Chicken Curry that you can get at a takeaway. The secret to the flavour is the apples. Trust me, it works!

Ingredients

  • ½ tbsp oil
  • 1 onion, diced
  • 2 small apples, peeled and chopped

Method

  1. Sauté the oil and onions in a large saucepan for 2–3 minutes or until the onions have softened.
  2. Add the apples and garlic and continue to cook for another minute.
  3. Add the flour and curry powder and quickly mix, cooking for about 30 seconds.
  4. Add the chicken stock and soy sauce, bring to the boil and simmer for 10 minutes.
