This all-in-one casserole is ideal for the busiest of days. Everything gets cooked together in the slow cooker, including the potatoes, so there’s no need to prep and cook any sides.

Ingredients

  • 500 g baby potatoes
  • 500 g skinless chicken thighs
  • 3

Method

  1. Chop the baby potatoes in half and add them to the slow cooker along with the rest of the ingredients, except for the mushrooms.
  2. Stir well and then cook on high for 4–5 hours or low for 5–6 hours. Add the mushrooms halfway through cooking.
  3. Serve with cooked green vegetables.
