Spaghetti bolognese is always a family favourite. Boost the nutritional value of this classic recipe with hidden carrot, courgette, peppers and leeks. Great for fussy eaters!

Ingredients

  • 1 courgette
  • 1 red pepper

Method

  1. Prepare all the vegetables first. Peel the carrots and grate them. Grate the courgette and then chop the red pepper and leek very finely.
  2. Heat the oil in a large pan or shallow casserole dish.
  3. Add the onion, garlic and vegetables and cook for 3–4 minutes.
  4. Add the minced beef (or veggie equivalent) and continue to fry for another 4 minutes un
