You can’t beat a bowl of creamy mashed potato as the ultimate comfort side dish. Add a twist to this classic recipe with some grated Cheddar cheese and fresh chives. This is ideal to batch cook and have in the freezer for busy days.

Ingredients

  • 1.2 kg Maris Piper potatoes
  • 100 ml milk
  • 40 g

Method

  1. Peel the potatoes and chop them into equal-sized chunks.
  2. Add to a saucepan and cover with boiling water.
  3. Simmer for 12–15 minutes until soft.
  4. Drain the potatoes well and add them back into the saucepan.
  5. Add the milk and butter and mash with a potato masher until completely smooth.
  6. Add the grated cheese and chives and mix
