This recipe is ideal to use up any lingering vegetables at the bottom of the fridge that might be a little past their best. Turn them into a delicious side dish or even a hidden veggie pasta sauce for the kids.

Ingredients

  • 1 tbsp oil
  • 1 onion, diced
  • 2 garlic cloves, crushed

Method

  1. Put the oil, onion and garlic into a large saucepan or frying pan on the hob and sauté for about 3 minutes until the onion starts to soften.
  2. Add the aubergine, courgette, pepper and tomatoes and cook for another 4 minutes.
  3. Add the tinned tomatoes, water, balsamic vinegar, sugar and basil and bring to the boil.
  4. Simmer for 30 minutes.
