It looks incredible and menacing, but scorpion fish (also called rockfish) is easy to eat with your fingers, having sweet white meat and a slight crustacean-like flavour. ‘The scorpion fish has a very attractive body in wild red and white tones, and a spikey head. I think it’s reminiscent of a gurnard.’
Cook it simply; deep-fried and whole. Season the fish with salt, pepper, lemon juice and olive oil, then roll it in flour and deep fry the fish in olive oil.
