For something truly exotic, Cheong likes roasted, caramelised duck web filled with chicken liver and pork belly. It brings back cherished childhood memories.

Method

It was my dream snack when my grandma would take me to the main market in Kuala Lumpur. This was such a treat – and it’s visually fantastic, looking like a claw clutching a prize. The small piece of liver and belly pork eaten together is the most delicious prize, like eating foie gras and barbecue at the same time.
