Duck Breast with Olives and Caramelised Turnip

Turnip is the perfect match with pan-fried Magret duck breast. This is a dish that chef Urs Inauen liked to present at Regency College on the student restaurant lunch menu.

This recipe introduced me to the French style of combining ingredients. The
