This is a great Chinese dish that Cheong first experienced in Kuala Lumpur’s Pudu car park food court. Incredibly, a famous local chef had left a big hotel restaurant to have this stall with only four tables – and you had to book months in advance for his seven-course banquet.
It was just him, dressed in a Hawaiian shirt, and his wife in the kitchen, with one girl serving – it was very cool. To start the evening, we were given this rich gingery beef broth with garlic chives and Chinese rice wine. It had almost as much ginger as beef – but it was so refreshing and uplifting.
