The name laksa – made popular by Straits Chinese (Peranakan) in Malaysia and Singapore – may originate from a Sanskrit word ‘laksha’ meaning ‘many’, referring to the many ingredients required to make this spicy noodle soup. It also alludes to many different ways of making laksa.
Method
As a Malaysian, I adore laksa, but I am a great believer that you make the dish speak of where you are. You should use whatever ingredients you’ve got in front of you, wherever you may be. Therefore, in Adelaide, I look at the local environment to inspire a local Australian take on laksa.
Cheong especially remembers the laksa he tried as a child in Ku
