I’ve always been fond of using tea as an ingredient to add subtle flavour to dishes. Tea can subdue gamey tastes, and improve colour. I like mystical tea flavours that can be infused to marinate and tenderise, especially those scented with fruits or flower like Jasmine, or with smoky characteristics like Lapsang Souchong.
