Mas riha, the national dish of the Maldives, comprises fresh tuna nestled in a vibrant, fragrant, surprisingly complex coconut curry sauce. It’s a beautiful dish, and delicious when served with steamed basmati rice.

Ingredients

  • 1 lb [455 g] fresh tuna steaks, cut into 1½ in [4 cm] pieces
  • Kosher salt
  • Freshly ground black pepper

Method

Pat the fish dry, then lightly salt and pepper all sides.

In a large, deep saucepan or Dutch oven over medium, heat the coconut oil until shimmering. Add the onion and cook until softened, 5 to 7 minutes. Add the garlic, ginger, chiles, and curry leaves and sauté for 1 minute or so, then add the cardamom, turmeric, garam masala, cumin, and ½ tsp pepper and sauté for 30 seconds more, unt
