Method

In a large pot over medium, heat the oil. Add the onion and sauté for 3 to 5 minutes, until it becomes translucent. Add the beef, garlic, ginger, 1 tsp of the salt, and pepper and cook, stirring, until the meat is fully cooked.

Add the tomatoes and greens, then lower the heat and simmer for 10 minutes, stirring constantly, until the greens are wilted.
