Similar to Gato Pima, these flavorful fried dumplings are a great snack but can also be eaten atop a salad or in a wrap. This recipe uses sambar powder, a curry blend that incorporates ground lentils; garam masala is a good substitute.

Ingredients

  • 2 cups [280 g] all-purpose flour
  • 1 Tbsp kosher salt, plus more as needed

Method

In a large mixing bowl, combine the flour, salt, pepper, sambar powder, and baking soda and mix well with a fork to fully incorporate. Add the spinach, chiles, onion, and tomato and fold to fully incorporate. Slowly add ¼ cup [60 ml] of water, mixing the batter with your hands or a rubber spatula, until it forms a thick paste.
