This magical marinade pairs well with just about any kind of protein. While it is great for seafood, particularly shrimp, it’s particularly good for tough, fatty pork shoulder. The natural enzymes in the pineapple tenderize the dense pork, allowing the marinade to infuse the meat with chiles, garlic, and soy. Islas recipe developer Jenn de la Vega recommends adding a bit of 7UP (not Sprite!) to add a bit of extra sweetness.
