Like many other Malagasy dishes, koba is simple, hearty, and satisfying. It’s one of the few sweet dishes in this book, and a favorite among Islas recipe developers. Roasted peanuts and bananas are sweetened with honey and vanilla, blended with glutinous rice flour, then wrapped in banana leaves and steamed. Topped with a halved banana, they’re very cute—as well as delicate yet rich—and make for a nice presentation.
