This fun, fruity condiment is flavorful, tangy, and mildly sweet. While this version is from the Caribbean, variations are also popular in the Philippines and across Southeast Asia. Use as you would standard tomato ketchup on french fries or alongside any of the doughy fried snacks in this book.

Ingredients

  • 2 Tbsp peanut or vegetable oil
  • ½ cup [70 g] finely

Method

In a medium saucepan over medium-high, heat the peanut oil until shimmering, 1 to 2 minutes.

Add the onion and sauté, stirring occasionally, until softened, about 5 minutes. Add the garlic, jalapeño, ginger, turmeric, and allspice and cook until fragrant, about 30 seconds.

Stir in the banana, vinegar, honey, rum (if using), tomato paste, soy sauce, and salt, then bring back to a
