This fun, fruity condiment is flavorful, tangy, and mildly sweet. While this version is from the Caribbean, variations are also popular in the Philippines and across Southeast Asia. Use as you would standard tomato ketchup on french fries or alongside any of the doughy fried snacks in this book.

  • 2 Tbsp peanut or vegetable oil
  • ½ cup [70 g] finely

Method

In a medium saucepan over medium-high, heat the peanut oil until shimmering, 1 to 2 minutes.
