A variation on classic Indonesian peanut sauce, this recipe combines coconut milk, garlic, and fresh cilantro with peanut butter for a rich, flavorful dipping sauce. Serve alongside Sate Ayam.
In a blender or small food processor, combine the garlic, sugar, sriracha, and lime juice and pulse four or five times until the garlic is ground to a paste. Scrape the sides of the blender, then add the coconut milk, peanut butter, cilantro, and soy sauce and purée to a thick sauce. Taste and add more soy sauce or sriracha, for added umami or spiciness respectively, if desired.
