A great breakfast standard. You can add dried mint or pul biber (Aleppo pepper) or other chilli flakes when you add the tomatoes, for an extra flavour dimension.
Heat the olive oil in a frying pan over medium heat. Add the onion, and sauté for 5 minutes, or until soft and translucent. Next, add the capsicum and tomatoes, and continue cooking for a few minutes until the vegetables have softened. Crack the eggs into the pan one at a time, season with salt and scramble by whisking together the contents of the frying pan with a fork or whisk. Allow 5–10 min
