Sumac comes from the dried and crushed fruits of a shrub to small tree (Rhus coriaria), and is a widely used spice in Middle Eastern and Mediterranean cuisine. With its acidic caste, it is a good substitute for lemon as a seasoning.
Put the olive oil and molasses in a small bowl. Season with salt to taste, and stir to combine. Dress the parsley with this sauce, then add the walnuts and ground sumac.
