Fish sauce was not originally imported from afar to Turkey, but made instead by the Greeks. Its manufacture, similar to that of the Classical Roman garum, has fallen away. This is a recipe from the Agora Meyhanesi in Balat. Perhaps fish sauce will be reborn at the Agora, which aims to revive the customary know-how and traditions of the meyhanes, all in-house.
