Making a Turkish meal can take a long time, several days even. Not just because some recipes take a little while to make, but rather because a multitude of meze is required for a crowd of guests. And in 5 minutes, it’s all gone’, Ayşe (Aicha’) explains to me, laughing. This quick and easy salad is her creation. Thank you, Ayşe.

Ingredients

  • 2 tablespoons sunflower oil
  • 2 large zucchini (courgettes), grated
  • 1 ca

Method

Heat the sunflower oil in a large frying pan over medium heat. Add the zucchini and carrot, and sauté for 10 minutes. Meanwhile, crush the garlic with a little salt using a mortar and pestle. Add it to a tablespoon of the yoghurt in a small bowl, before adding the rest of the yoghurt, so that the garlic mixes through evenly. Dress the vegetables with the yoghurt sauce, then add the mint leaves
