Heat the sunflower oil in a large frying pan over medium heat. Add the zucchini and carrot, and sauté for 10 minutes. Meanwhile, crush the garlic with a little salt using a mortar and pestle. Add it to a tablespoon of the yoghurt in a small bowl, before adding the rest of the yoghurt, so that the garlic mixes through evenly. Dress the vegetables with the yoghurt sauce, then add the mint leaves
