Allspice is a very gentle, perfumed pepper-like spice, with a hint of clove. Together with cinnamon, it forms the most common duo of spices found in Turkish vegetable dishes, meats and pilavs. Do not hesitate to make this leek dish well ahead of serving time, as it is best enjoyed cold.

Ingredients

  • 1 kg (2 lb 4 oz) leeks, white parts only, sliced into rounds (reserve the green parts for another use – making stock perhaps)

Method

Put the leeks in a large saucepan, and add just enough water to reach the top of the vegetables, not cover them. Add the rice, olive oil, lemon juice, cinnamon, allspice and sugar. Season with salt. Cover and cook for about 30 minutes over medium heat. Leave to rest for at least 1 hour before serving cold.
