  • 200 g (7 oz) minced (ground) meat with a good proportion of fat (such as chuck steak mixed with mutton)

Combine all the ingredients except the vine leaves and olive oil in a large bowl. Season with salt and freshly ground black pepper. Use to stuff the vine leaves, blanched beforehand (as explained in the recipe). Line the bottom of a large flameproof casserole with leaves and arrange the rolls on top, packed tightly.
