The quince is an odd fruit, inedible raw but exceptionally subtle and perfumed once cooked. Depending on how it is made, this dessert can be almost like a quince jelly. I prefer the version at the Sakarya Tatlicisi pâtisserie at the Balık Pazari (fish market) in Beyoğlu which is not as sweet as some examples and more balanced.
