A fresh lemonade on the shaded terrace of a chic café in Nişantaşi, after a long walk in the spring weather, and you will soon be off again on your tour of the local shops and markets. A good variation is to add a few mint leaves to the lemons for squeezing or at the bottom of the lemonade glass, crushed using a pestle.


  • 5 unwaxed lemons
  • 200 g (7 oz/scant 1 cup)


Cut the unpeeled lemons into cubes, put in a medium-large bowl and cover them with the sugar. Leave to rest for at least 1 hour if possible, so that the lemons become impregnated with the sugar. Tip the contents of the bowl into a sieve set over a large bowl, then pour 1.5 litres (
