This deliciously crunchy and refreshing green salad from Basilicata owes its pungent flavour to fresh basil. The herb grows best in hot, dry conditions, so is very well suited to the climate of southern Italy. Remove and discard the stalks from the spinach, then wash the leaves and dry them thoroughly on kitchen paper. Place the spinach in a salad bowl and add the peppers, sliced onion and basil leaves.
