This deliciously crunchy and refreshing green salad from Basilicata owes its pungent flavour to fresh basil. The herb grows best in hot, dry conditions, so is very well suited to the climate of southern Italy. Remove and discard the stalks from the spinach, then wash the leaves and dry them thoroughly on kitchen paper. Place the spinach in a salad bowl and add the peppers, sliced onion and basil leaves.

Ingredients

  • 450 g/1 lb fresh spinach leaves
  • 2 small green bell peppers, halved, seeded and roughly chopped
  • 1 onion, thinly sliced
  • about 8 fresh basil leaves
  • 20 ml/4 tsp lemon juice
  • 60 ml/4 tbsp extra virgin olive oil
  • sea salt and ground black pepper

Method

  1. Remove and discard the stalks from the spinach, then wash the leaves and dry them thoroughly on kitchen paper.

  2. Place the spinach in a salad bowl and add the peppers, sliced onion and basil leaves.

  3. Pour the lemon juice into a separate bowl. Whisk in the oil and season with salt and pepper.

  4. Pour the dressing over the salad, toss thoroughly and serve immediately.
