In general, the term ragù implies a hearty meat sauce. But that’s not always the case, as evidenced by this vegetarian mushroom ragù from Liguria. While it’s normally served with fresh egg pasta (substitute rigatoni for a vegan version), we’ve come to love this sauce so much, we use it in a few different ways. One of our favorites is to use it as the sauce base for poached eggs (a dish called “shakshuka” in North Africa and the Middle East).
