Neapolitan Pasta with Potatoes

This dish breaks about every pasta rule there is, but for good reason. While breaking pasta into pieces is normally a sin, this Neapolitan classic was formulated specifically to use the broken bits that are always present in the bottom of a pasta package. We recommend setting aside a big jar where you can collect these mixed bits of different pastas (pasta mista) until you have enough to make this dish.
