This meaty, creamy pasta comes from central Italy. There are many versions: some use guanciale or sausage instead of pancetta, some skip the tomato, and some don’t have cream. We’ve chosen to include the latter to satisfy cream-lovers, who are often disappointed at how infrequently the ingredient is used in Italian cuisine. Boscaiola is a notable exception in a country that largely despises cream.
