Fried Eggplant & Tomato Pasta

This pasta is named after the opera Norma, because the dish is considered to be as sublime as Bellini’s music. While we hesitate to give it such a strong title as Our Favorite Pasta, it’s worth noting that in private conversation we use pasta alla Norma as the yardstick against which we measure all other dishes: “It’s really good, but would I eat it instead of a Norma?” In short, it’s a dish that we believe everyone should try at some point in their life.
