In order to technically be considered “alla Milanese,” this saffron risotto should be served with Ossobuco alla Milanese, one of the rare cases when first and second courses are plated together. You can certainly skip the meat, in which case the dish becomes risotto allo Zafferano. In any case, it’s one of the most beloved risotti for good reason.
