This classic dish from Milan is made with veal shanks braised in a tangy white wine sauce until fall-off-the-bone tender. It’s delicious as is, but for the authentic experience, try serving it atop Risotto alla Milanese. It’s one of the rare instances in Italian cuisine in which a first and second course are served together on the same plate, and for good reason: the pairing is extraordinarily delicious.
