Acqua pazza—literally “crazy water”—is a simple but delicious sauce that is most often paired with whole fish, such as sea bream (orata). Sea bass, mackerel, branzino, cod, and halibut are also good options. Leftover acqua pazza sauce is fantastic with pasta. You can easily add a few extra tomatoes and a little more wine, set aside the fish when cooked, and mix some al dente pasta directly in the pan for a delicious first course.
