Carne alla pizzaiola, which translates to “pizza maker–style meat,” is more of a technique than a specific recipe, as it can be applied to just about any thin cutlet. Beef is the most common choice, but pork, chicken breast, and veal are also excellent options. Because the tomato sauce keeps the meat moist and tender, this is a great way to turn lean, cheap cuts into a delicious dish.
